bringing your tribe together to enjoy a meal, even if it means preparing that
meal with one free hand and someone pulling at your leg. Not only do I hope to offer delicious, easy
to prepare recipes, but I’ll also show you how getting your kids involved in
the process can make the meal that much more rewarding for you and those eating
10-12 slices of Deli Organic Rare Roast Beef. (Thin to medium slice)
4 TBs pickled horseradish
¾ cup light mayo
¼ cup light Greek yogurt
1 TBs Dijon mustard
½ tsp honey
1 tsp cayenne pepper
Salt to taste
1 English Cuke – Diced
½ cup chopped chives
First, cut the roast beef deli slices into ½ inch horizontal strips so you’ll have about 10 pieces per deli slice. Next mix the next 7 ingredients in a bowl. Taste to make sure it has the right amount of salt and acidity balance. Add more salt and/or horseradish if needed. Set aside and refrigerate. This sauce can be made up to 3 days in advance.
Line up your potato chips. Then add the beef, sauce, cukes and chives. This is best served immediately cool or at room temp. Enjoy!
