Pirate Party Grub, Part II

I know you have all been waiting on the edge of your seats for the rest of the Pirate Party recipes.   The following two recipes are very simple and can be made 1-2 days ahead.   You will notice I like using the same ingredients throughout to complement the whole menu.

Skully’s Apply/ Broccoli Slaw:

1 shredded green apple mixed with 1tsp lemon juice to prevent browning

1 bag of broccoli slaw

2 cups of shredded carrots

½ medium Vidalia onion grated

Dressing:

½ cup low fat mayo

3 TBS of cider vinegar

1 small clove garlic, crushed

1 tsp Dijon mustard

salt to taste

Toss all the ingredients for the salad together in a large bowl.  Mix the dressing in a separate bowl and incorporate into the slaw.  Feel free to omit the fresh garlic and add garlic power.  Let sit for at least 1 hour before serving.

Homemade Baked Beans:

A friend of mine makes killer beans.  Here’s her recipe with a bit of a twist.

6 cups of water

1 medium yellow onion, chopped

1 16 oz bad of red kidney beans, rinsed

4-5 strips of hickory smoked bacon, chopped

½ cup molasses

½ cup brown sugar

1 chicken bullion packet (I prefer the Trader Joe’s one)

2 Tbs Dijon mustard

1 Tbs cumin

Dash of cayenne pepper

Salt to taste

Place rinsed beans in crockpot the night before and cover with water.  The next morning, drain the excess water and place all ingredients in crockpot and stir.  Cook on low for 10 hours and enjoy the smell in the house.
