Guacamole with a side of Greek


I always designated my friend to make guacamole when she came to my parties.  Jackson actually devoured it on his first birthday.   After a trip to Mexico, my husband became obsessed with guacamole and I knew I had to start making it at home.  

Not only is guacamole so yummy, it can be served anytime of the day and it’s also extremely good for you.  The following recipe came around by accident.  My kids and I were starting to scoop out the 2 avocados and one of them was not ripe enough.  I tried to figure out how to stretch  our portions so I added Greek yogurt and voila!  My guac has been a huge hit at book club, supper group and especially in a huge bowl in front of my husband. 


2 ripe avocados

Juice of 1 small lime

1 small shallot, chopped

2 heaping TBs of plain Greek yogurt

¼ cup finely chopped cilantro

Salt and Sriracha to taste

Optional:  1 chopped jalapeño if your children like spice

Mash avocados until smooth.  Mix all ingredients and enjoy. 

My guacamole guru friend taught me to take the pit and put it into the guacamole to prevent browning.  It works wonders, but it still should be enjoyed the same day.
