Foul Mudammas:

Do you remember the tahini recipe I posted a few weeks ago?  Well, that was for my vegan friend and sister-in-law.  This flavorful protein packed dish accompanied her vegan dinner. 

This dish is very popular in the Middle East and can be served warm and as breakfast with pita bread.  I like to serve it as a cold side dish with a hot entree.


1 can fava beans

½ large lemon juiced

1 clove garlic crushed

¼ cup chopped parsley

1 med tomato chopped

3 TBS olive oil

Salt to taste

Mix the above ingredients, except the tomato, and let sit for 2-4 hours so that the beans are marinated.  When ready to serve, top with tomato and garnish with parsley and another drizzle of olive oil.  

On a side note, I’ve also seen restaurants put tahini sauce on top of the Foul Mudammas and serve that way as well.  No matter which way you try it, enjoy!
